  4. 1 tbsp Biryani Masala
  5. 1/2 cup Curd
  6. 1 tbsp Oil
  7. 1 tbsp Turmeric powder
  8. 1 tbsp Cumin powder
  9. 1 tbsp Salt
  10. 1 tbsp ginger garlic paste
  11. 1 tbsp red chilli powder
  12. 3-4 green chillies
  13. 4 tsp Coriander leaves
  14. 2 tsp mint leaves
  15. 1 inch Drycinnamon stick
  16. 3 cardamom
  17. 2 cloves
  18. 2 bay leaf
  19. 1 tbsp Lemon juice
  20. 1/2 tsp Saffron
  21. 3 tbsp Ghee
  22. 2 tbsp Milk
  23. 2-3 drops Kewra water
  24. 1 tsp rose water
  25. 1 star flower
  26. 1 tsp cumin seeds

Steps to make to make Hydrabadi Mutton Biryani

  1. First fry slice onions.keep aside.
  2. Marinate the Mutton with ginger garlic paste,red chili powder, lemon juice, Biryani Masala, turmeric powder and fried onions.
  3. Add 1/2 cup Curd,salt and mix well.
  4. Add chopped coriander leaves,mint leaves, green chillies.
  5. Add oil and keep it for 1 hr.
  6. Soak basmati rice for 1 hr.
  7. Cook the marinated Mutton for 15 mins.
  8. Cook the basmati rice 50% with whole dry spices.
  9. Now make the layer, spread rice all over the Mutton.
  10. Top with fried onions and coriander leaves and mint leaves.
  11. Again do the same and sprinkle rose water and kewra water.
  12. Pour over some saffron which is soaked in some milk.
  13. Made sticky atta dough and place it on the rim or you can cover it with foil paper.
  14. Cook it for 30 mins.
