  16. 1 tsp lemon juice
  17. 3 tbsp sugar
  18. 1/3 cup water
  19. 1 pinch hing powder

Steps to make to make Dhokla

  1. Wash and soak rice and chana dal overnight in water or for 8-10 hours.
  2. Drain excess water and grind them with curd and water to make a smooth batter. It's consistency should be like idli batter.
  3. Transfer it to a large bowl and add salt and turmeric powder. Mix well and put it to ferment in warm place for 6-8 hours.
  4. After fermentation the batter will have sour aroma.
  5. Grease a pan with oil. Pour water at the bottom of a large pot and place a stand inside. Heat it over medium flame and let the water come to boil.
  6. Add oil, chilli paste and ginger paste into the fermented batter and mix them well. Add baking soda and stir in one direction for 1 minute.
  7. After stirring for a minute, you will notice bubbles on the surface of the batter.
  8. Pour it immediately into the greased pan.
  9. Place the pan on the stand inside the pot. Cover the pot with a plate or a lid.
  10. Steam it for 15-20 minutes over medium flame. After 15-20 minutes, insert a knife in the center and check if it comes out clean. If it does, then it is ready otherwise steam it for few more minutes.
  11. Let it cool for few minutes and cut it into small squares.
  12. Heat oil in a tadka pan. Add mustard seeds, let the mustard seeds crackle.
  13. Add hing powder.
  14. Add curry leaves and green chillies. Fry for few seconds or till they become crispy.
  15. Switch off the flame and very carefully add water, lemon juice and sugar. Stir and mix well.
  16. Again turn on the gas and let the tadka come to a boil.
  17. Switch off the flame and spread this tadka on the dhokla.
  18. Let the dhokla soak in the tadka for at least 15 minutes.
  19. Serve dhokla with coriander coconut chutney.
